    Preheat oven to 425°F. Wash and dry all produce. Cut sweet potatoes into thin sticks. Toss on a baking sheet with a large drizzle of olive oil and a pinch of salt and pepper . Place in the oven for about ⏱️ 25 minutes , tossing once, until golden brown.

    Mince garlic . Peel and grate carrots . Halve, peel, and finely dice red onion . Place ½ cup diced onion aside in a large bowl .

    Heat a large drizzle of olive oil in a small pot over medium heat. Add remaining red onion and cook, tossing, for ⏱️ 2 minutes until softened. Add chili powder and cook ⏱️ 1 minute until fragrant. Stir in BBQ sauce , 2 tsp white wine vinegar , and ½ cup water. Reduce to a low simmer until ready to use.

    Add ground pork and minced garlic to the large bowl with the diced onion. Season generously with salt and pepper. Form into 4 patties. Heat a large drizzle of olive oil in a large pan over medium-high heat. Add patties and cook ⏱️ 4 minutes per side until cooked through.

    While burgers cook, combine remaining white wine vinegar , 3 tbsp mayonnaise , and 2 tsp sugar in a large bowl . Toss in shredded red cabbage and grated carrots. Season with salt and pepper.

    Split potato buns and place in the oven to toast ⏱️ 2 minutes . Spread each bun with barbecue sauce, top with a pork patty, and finish with coleslaw. Serve sweet potato fries and remaining coleslaw on the side. Use extra barbecue sauce and mayonnaise for dipping fries.
