review_highlights:
  - theme: Flavor
text: The zesty cilantro sauce is a standout that elevates the mild, flaky barramundi beautifully. Sweet roasted carrots and buttery garlic couscous create a well-balanced, harmonious meal.
  - theme: Ease of prep
text: Most find it straightforward and quick, though some note it requires more prep time than expected. Using a nonstick pan helps prevent the fish from sticking during cooking.

Preheat oven to 425°F. Wash and dry all produce.

Toss @carrot{2%whole} on a foil-lined #baking sheet{} with a drizzle of @olive oil{3%tbsp}, @salt{1%tsp}, and @black pepper{1%tsp}. Roast until tender and slightly charred ~{15%minutes}.

While carrots roast, in a #small bowl{}, combine @cilantro{½%cup}, half the @cumin{1%tsp}, half the @lemon{1%whole} zest, 2 tbsp olive oil, a big squeeze of lemon juice, and a pinch of @garlic{4%clove} to taste. Season with salt, black pepper, and @chili flakes{½%tsp} to taste.

Heat 1 tbsp @butter{2%tbsp} in a #small pot{} over medium-high heat. Add @israeli couscous{1%cup}, @veggie stock concentrate{1%tsp}, and remaining garlic. Cook, stirring often, until garlic is fragrant and couscous is lightly toasted ~{2%minutes}.

While couscous cooks, pat @barramundi{12%oz} dry with paper towels. Season all over with remaining cumin, salt, and black pepper. Heat @cooking oil{1%tbsp} in a #large pan{} over medium-high heat. Cook barramundi until opaque and flaky ~{3%minutes} per side.

Fluff couscous with a fork; season with salt and black pepper. Serve barramundi topped with zesty cilantro sauce, alongside roasted carrots and couscous.
