Wash and dry all produce. Halve, core, and thinly slice @red bell pepper{1%unit} into strips. Peel and dice @sweet potatoes{2%unit} into ½-inch pieces. Halve, peel, and thinly slice @yellow onion{1%unit}; mince a few slices until you have 2 tbsp.

Toss red bell pepper, sweet potatoes, and sliced onion on a #baking sheet{} with a large drizzle of @cooking oil{1%tbsp}, @fajita spice blend{1%tbsp}, a big pinch of @salt{1%tsp}, and @black pepper{½%tsp}. Roast on top rack until browned and tender ~{20%minutes}.

While veggies roast, dice @tomato{1%unit} into ¼-inch pieces. Roughly chop @cilantro{0.5%cup}. Quarter @lime{1%unit}. Mince @jalapeño{1%unit}, removing ribs and seeds for less heat.
In a #medium bowl{}, combine tomato, minced onion, cilantro, juice from half the lime, a pinch of salt and pepper, and as much jalapeño as you like.
In a #small bowl{}, whisk together @vegan mayo{2%tbsp} and @guacamole{0.5%cup}. Whisk in @water{1%tsp} 1 tsp at a time until mixture reaches a drizzling consistency. Season with salt.
