    Adjust rack to top position and preheat oven to 425°F. Wash and dry all produce.

    On a baking sheet , toss potatoes with a large drizzle of cooking oil , half of the cajun spice blend , salt , and black pepper .

    Meanwhile, heat a large drizzle of cooking oil in a medium pan over medium-high heat. Add onion and cook, stirring occasionally, until browned and softened ⏱️ 8 minutes .

    While onion cooks, in a small bowl , combine dijon mustard , mayonnaise , ketchup , hot sauce , sugar , diced sliced dill pickle , half the spicy horseradish paste , and remaining cajun spice blend . Season with salt and black pepper .

    Heat a drizzle of cooking oil in the pan used for onion over medium-high heat. Add ground beef patties and cook until browned and cooked through ⏱️ 4 minutes to ⏱️ 7 minutes per side. During the last minute, top patties with white cheddar cheese to melt. Meanwhile, cook bacon in a small skillet until crisp.
