Preheat oven to 425°F. Wash and dry produce. Cut @potatoes{12%oz} into ½-inch-thick wedges. Halve, peel, and thinly slice @onion{1%medium}, then mince a few slices until you have 2 tbsp.

Toss potatoes on a #baking sheet{} with a drizzle of @cooking oil{2%tbsp}, @salt{1%tsp}, and @black pepper{1%tsp}. Roast on top rack until browned and tender ~{20-25%minutes}.

Meanwhile, in a #large bowl{}, gently combine @ground beef{1%lb}, @panko breadcrumbs{2%tbsp}, @garlic powder{1%tsp}, @chicken stock concentrate{1%unit}, minced onion, half the @ketchup{2%tbsp}, salt, and pepper. Form mixture into two 1-inch-tall loaves. Place on a second #baking sheet{}. Brush tops with remaining ketchup. Roast on middle rack until cooked through ~{15-20%minutes}.

While potatoes and meatloaves cook, heat a drizzle of @cooking oil{2%tbsp} in a #large pan{} over medium-high heat. Add sliced onion and cook, stirring occasionally, until browned and softened ~{8-10%minutes}. Add 1 tsp @sugar{1%tbsp} and a splash of @water{2%tbsp}. Cook, adding more water as necessary, until onion is caramelized and jammy ~{2-3%minutes}. Season with salt and pepper. Turn off heat and transfer onion to a #small bowl{}. Wipe out pan.

Heat 1 tbsp @butter{2%tbsp} in same pan over medium heat. Add @sourdough bread{4%slices} and toast until golden brown ~{2-3%minutes} per side, adding more butter if needed. While bread toasts, in a second #small bowl{}, combine @mayonnaise{2%tbsp}, half the @wasabi paste{1%unit}, half the @dijon mustard{1%tbsp}, and ¼ tsp sugar. Season with salt and pepper if needed.

Lay toasted bread out on a cutting board. Spread half the slices with caramelized onion; spread remaining slices with sauce, saving some for serving. Cut each meatloaf crosswise into four slices and fan out over onion-topped bread. Close sandwiches and cut in half. Divide sandwiches and potato wedges between plates. Serve with remaining sauce on the side.
