Wash and dry all produce. Preheat the oven to 400°F. Halve, peel, and finely dice half the @red onion{1%unit}. Drain and finely chop the @pineapple{1%unit}. Finely chop the @chives{2%tbsp}. Peel the @carrot{1%unit}, then grate it with a box grater.

Heat a drizzle of @olive oil{2%tbsp} in a large ovenproof pan over medium heat. Add the diced red onion. Cook, tossing, ~{2%minutes} to ~{3%minutes} until softened. Add the pineapple. Cook, tossing, ~{2%minutes} to ~{3%minutes} until lightly caramelized and jammy, adding 1 tbsp water if necessary. Season with @salt{} and @pepper{}. Remove from the pan and set aside in a large bowl. Wipe out any browned bits from the bottom of the pan.

Meanwhile, toss the @shredded red cabbage{2%cups} in a medium bowl with the chives, carrot, 1½ tbsp @mayonnaise{3%tbsp}, 1 tbsp @white wine vinegar{1%tbsp}, and @sugar{1%tsp}. Season generously with salt and pepper.

Form the @ground beef{1%lb} into two equally-sized patties. Season generously with salt and pepper.

Heat a drizzle of olive oil in the same pan over medium-high heat. Add the patties to the pan. Cook ~{2%minutes} to ~{5%minutes} per side, until cooked to desired doneness. Top each patty with @monterey jack cheese{4%slices}, covering the pan to allow it to melt. Meanwhile, split the @brioche buns{2%unit} and place in the oven to toast ~{3%minutes} to ~{5%minutes}.

Thinly slice the remaining red onion. Spread the buns with the remaining mayonnaise and top with a burger, caramelized-pineapple relish, and a few slices of onion. Serve alongside the red cabbage slaw.
