Wash and dry all produce. Preheat toaster oven or oven to 400°F. Slice 1 @dill pickle{2%pickles} into thin rounds; quarter the other lengthwise to create four spears. Cut 1 @roma tomato{2%tomatoes} into thin rounds; dice the other. Halve @lemon{1%lemon}. Peel @red onion{1%onion}, then slice four ¼-inch-thick rounds from the fattest part.

Divide @ground beef{16%oz} into four pieces, then shape each into a ball. Flatten each ball with your palm into a wide circle about ⅓-inch thick. Season generously with salt and pepper.

Heat a large drizzle of @vegetable oil{2%tbsp} in a #large pan{} over high heat. Add patties to pan and immediately press down with a spatula to flatten them as much as possible. Cook until deeply browned and crisp on bottom ~{3%minutes}. Press down with spatula while patties cook to increase surface contact for maximum crispiness.

Flip patties and cook on other side ~{2%minutes}. Sprinkle @cheddar cheese{4%slices} onto tops of patties, cover pan, and continue cooking until cheese melts ~{1%minute}.

While patties cook, split @potato buns{2%buns} in half and toast in toaster oven or oven until lightly golden ~{1%minute}. Place @mixed greens{2%cups}, diced tomato, a squeeze of lemon, and 4 tsp @olive oil{4%tsp} in a #medium bowl{} and toss to combine. Season with salt, pepper, and more lemon.

Mix @ketchup{2%tbsp} and a pinch of @chipotle powder{1%tsp} in a #small bowl{}. Spread ketchup mixture onto buns, then fill with patties, pickle rounds, tomato rounds, and onion slices. Serve with salad and pickle spears on the side.
