Drain any excess liquid from @chicken cutlets{1%unit}; place in a large pot with enough salted water to cover by 2 inches. Cover and bring to a boil; reduce heat to medium low and simmer until chicken is cooked through ~{10-12%minutes}. Transfer chicken to a cutting board; discard cooking liquid. When cool enough to handle, shred chicken with two forks. You can also cut it into cubes.

While chicken cooks, wash and dry produce. Trim, peel, and dice @carrot{1%unit} into ¼-inch pieces. Halve, peel, and dice @onion{1%unit} into ¼-inch pieces. Drop @cream cheese{1%unit} into a small bowl of warm water to soften. Heat a drizzle of @cooking oil{1%unit} in a medium pot over medium-high heat. Add carrots and onion; season with @salt{1%unit} and @black pepper{1%unit}. Cook, stirring occasionally, until slightly softened ~{2-3%minutes}. Stir in @jasmine rice{1%unit}, @chicken stock concentrate{1%unit}, @water{2¼%cups}, and a big pinch of salt. Bring to a boil, then cover and reduce heat to low.
