2Wash and dry all produce. Halve, peel, and dice half the red onion into 1⁄4-inch pieces; thinly slice remaining onion. Zest and quarter lime. Core, deseed, and dice bell pepper into 1⁄4-inch pieces. Dice sweet potato into 1⁄4-inch pieces. -
3In a small microwave-safe bowl , combine sliced onion, 1⁄2 tsp sugar, juice from three lime wedges, and a pinch of salt. Cover with plastic wrap and microwave for ⏱️ 30 seconds . Refrigerate until ready to serve, stirring occasionally. -
4Heat a drizzle of olive oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking up meat into pieces, until slightly browned ⏱️ 2 minutes . -
5Reduce heat to medium. Stir in diced onion, bell pepper, sweet potato, mirepoix paste, fry seasoning, 1 cup water, a large drizzle of oil, and as much chili powder as you like. Cover and cook until veggies are softened and turkey is cooked through ⏱️ 6 minutes . Uncover and continue to cook, stirring occasionally, until all but a thin layer of liquid has evaporated from pan ⏱️ 5 minutes more. -
6Meanwhile, in a second small bowl, combine lime zest, sour cream, and juice from one lime wedge. If necessary, add water 1 tsp at a time until mixture reaches a drizzling consistency. Season with salt and black pepper. -
7Once most of the liquid in pan has evaporated, reduce heat to medium low. Evenly top turkey mixture with mozzarella cheese. Cover and cook until cheese melts ⏱️ 1 minute . Remove from heat. -
8Top skillet with lime crema and pickled onion (draining first). Serve family style directly from skillet.
