Wash and dry all produce. Pat dry @chicken cutlets{2%pieces} and season with @salt{1%tsp} and @black pepper{1%tsp}. Halve @grape tomatoes{1%cup} and mince @garlic{2%clove}.

Heat a large drizzle of @olive oil{1%tbsp} in a #large pan{} over medium-high heat. Add @green bell pepper{1%piece}(diced), @button mushrooms{1%cup}(sliced), and @zucchini{1%piece}(diced); cook, stirring occasionally, until veggies are browned and just softened ~{5%minutes}. TIP: While veggies cook, move on to Step 3!

While veggies cook, heat a drizzle of @cooking oil{1%tsp} in a #small pot{} over medium heat. Add @scallions{2%stalks}(whites, sliced) and cook, stirring occasionally, until fragrant ~{1%minutes}. Stir in @veggie stock concentrate{1%unit} and remaining garlic. Simmer until slightly thickened ~{3%minutes}.

Divide @precooked polenta{1%package} between shallow bowls. Top with sautéed veggies, grape tomatoes, and chicken cutlets. Sprinkle with @nutritional yeast{2%tbsp} and reserved scallion greens. Serve.
