@chicken stock concentrate{1%unit}
@gluten-free fresh fusilli pasta{3%oz}
@italian seasoning{1%tsp}
@parmesan cheese{2%tbsp}(grated)
@salt{1%tsp}
@black pepper{½%tsp}
@cooking oil{2%tbsp}
@butter{1%tbsp}

Adjust oven rack to top position and preheat oven to 450°F. Bring a #large pot{} of salted water to a boil. Wash and dry all produce.

Toss zucchini on a #baking sheet{} with a drizzle of cooking oil, half the italian seasoning, and a pinch of salt and black pepper. Roast in oven until tender and lightly charred ~{15%minutes}.

Once water is boiling, add cavatappi pasta to pot. Cook, stirring occasionally, until al dente ~{10%minutes}. Reserve a splash of pasta water before draining.

While pasta cooks, heat remaining cooking oil in a #large pan{} over medium-high heat. Add onion and a pinch of salt and black pepper. Cook, stirring occasionally, until softened ~{5%minutes}.

Add tomato paste and remaining italian seasoning to pan. Cook, stirring constantly, until fragrant ~{1%minute}. Stir in chicken stock concentrate and italian chicken sausage. Cook, stirring, until sausage is heated through and sauce thickens ~{3%minutes}.

Stir drained cavatappi pasta, roasted zucchini, sour cream, and butter into pan until thoroughly combined. If needed, stir in reserved pasta water, a splash at a time, until pasta is coated in a creamy sauce. Top with grated parmesan cheese and serve.
