Bring a #medium pot{} of salted water to a boil.

Add @lo mein noodles{8%oz} to pot. Cook, stirring occasionally, until al dente ~{5%minutes}. Drain and set aside.

Wash and dry all produce.

Heat a drizzle of @cooking oil{2%tbsp} in a #large pan{} over medium-high heat. Add @organic chicken cutlets{2%pieces} and cook, stirring occasionally, until a crust forms ~{4%minutes}. Turn off heat; transfer to a plate. Wipe out pan.

Heat another drizzle of oil in pan over medium heat. Add @tomato{1%whole} (diced), @green bell pepper{1%whole} (sliced), @red onion{1%whole} (sliced), and @scallions{2%stalks} (whites); cook, stirring occasionally, until browned and tender ~{4%minutes}.

In a #small bowl{}, whisk @soy sauce{3%tbsp}, @sweet soy glaze{2%tbsp}, @ketchup{2%tbsp}, @chicken stock concentrate{1%unit}, @sriracha{1%tsp}, @cornstarch{2%tbsp}, @garlic powder{1%tsp}, and a splash of water until smooth. Return chicken to pan with vegetables. Pour sauce over and toss until thickened and everything is coated ~{2%minutes}. Season to taste with @salt{1%tsp} and @black pepper{1%tsp}.

Divide noodles between plates and top with chicken and vegetable mixture. Garnish with scallion greens. Serve.
