    Drizzle cooking oil in a medium pan . Add fully cooked beef meatballs and cook, stirring occasionally, until browned all over ⏱️ 3 minutes . Transfer to a plate.

    Wash and dry all produce. Finely dice half the onion . Trim and discard root end from baby lettuce and thinly slice leaves. Mix italian dressing and mayonnaise in a small bowl . Whisk until combined.

    Lower heat under pan used for meatballs and drizzle with remaining cooking oil . Add diced onion and cook, stirring occasionally, until softened ⏱️ 2 minutes . Whisk in water , tomato paste , marinara sauce , chicken stock concentrate , dried oregano , garlic powder , and sugar . Season with salt and black pepper . Add meatballs back to pan with sauce; stir to coat. Remove from heat and sprinkle with mozzarella cheese . Cover with a lid and set aside to let cheese melt ⏱️ 2 minutes .

    Halve and toast demi-baguette until golden. In a large bowl , toss baby lettuce , grape tomatoes , and croutons (crushing in the bag with your hands first) with as much dressing as you like. Top bottom baguette halves with cheesy meatballs and sauce. Close subs and serve with salad.
