Wash and dry all produce. Halve, peel, and dice @yellow onion{1} into ¼-inch pieces. Core and dice @green bell pepper{1} into ½-inch pieces. Peel and mince or grate @garlic{1%clove}. Dice @tomato{1} into ½-inch pieces. Dice @potatoes{2} into 1-inch pieces. Roughly chop @cilantro{1%bunch}.

In a #small pot{}, combine @jasmine rice{½%cup}, 1¼ cups water, and a pinch of salt. Bring to a boil, then cover and reduce to a low simmer. Cook until rice is tender ~{15%minutes}. Keep covered off heat until ready to serve.

Heat a drizzle of @cooking oil{1%tbsp} in a #large pot{} over medium-high heat. Add onion and bell pepper; cook, stirring occasionally, until softened ~{4%minutes}. Add garlic and tomatoes; season with salt and pepper. Cook, stirring occasionally, until garlic is fragrant and tomatoes are slightly softened ~{1%minutes}.

Meanwhile, drain any excess liquid from the chicken. Add @diced chicken thighs{12%oz} and potatoes to pot with veggies. Season with @fry seasoning{1%pkg}, half the @cumin{1%tsp}, salt, and pepper; stir to combine.

To same pot, add @chicken stock concentrate{2%cubes} and 2½ cups water; stir to combine. Increase heat to high and bring stew to a boil. Cook, stirring occasionally, until chicken is cooked through and potatoes are fork-tender ~{15%minutes}.

Fluff rice with a fork and stir in 1 tbsp @butter{1%tbsp}. Divide rice and stew between shallow bowls. Garnish with cilantro and serve.
