    Preheat oven to 450°F. Wash and dry all produce.

    Heat a drizzle of olive oil in a medium pot over high heat. Add onion , bell pepper , and half the blackening spice . Cook, stirring frequently, until softened and fragrant ⏱️ 2 minutes to ⏱️ 3 minutes .

    Add jasmine rice , chicken stock concentrate , 1%cup water, salt , and pepper . Stir to combine. Cover, reduce heat to medium-low, and simmer ⏱️ 15 minutes . Remove from heat and let stand, covered ⏱️ 5 minutes .

    While rice stands, rinse shrimp under cold water, then pat very dry with paper towels. Season shrimp with cajun spice blend .

    Pat chicken cutlets dry with paper towels and place between two large pieces of plastic wrap. Pound with a mallet or rolling pin until about ¼ inch thick. Season all over with remaining blackening spice , salt , and pepper .

    In a medium bowl , combine cream cheese , parmesan cheese , spinach , lemon , garlic powder , and half the seasoned shrimp. Season with salt and pepper. Spread mixture evenly over chicken cutlets, roll up tightly, and secure with toothpicks.

    Place stuffed chicken, seam sides down, on a baking sheet lined with foil. Bake in preheated oven until chicken is cooked through ⏱️ 12 minutes .

    Fluff jasmine rice with a fork. Stir in remaining whole shrimp and remaining chopped spinach. Taste and season with salt and pepper if desired. If necessary, warm up rice mixture over low heat. Serve chicken over rice.
