Adjust rack to top position and preheat oven to 425°F. In a #medium pot{}, bring @water{5%cup} to a boil, then reduce to a low simmer. Wash and dry all produce.

While the @broccoli{1%unit} roasts, heat a drizzle of @oil{1%tbsp} in a #large pan{} over medium heat. Add @scallions{4%unit}(whites) and cook, stirring, until fragrant ~{60%seconds}. Stir in @vidalia onion paste{1%tbsp}, @cream sauce base{½%cup}, and @shrimp{8%oz} until cooked. Add @arborio rice{1%cup} and stir until evenly coated ~{20%seconds}.

Once the risotto is done, remove from heat; stir in the roasted broccoli, @white cheddar cheese{¾%cup}, and @butter{1%tbsp} until melted and combined. Taste and season with @salt{1%tsp} and @pepper{1%tsp} if desired.
