@sour cream{½%cup}
@sirloin steak{8%oz}
@onion{1%unit}
@jasmine rice{½%cup}
@cumin{1%tsp}
@long green pepper{1%unit}
@garlic{3%cloves}
@jalapeño{1%unit}
@lime{1%unit}
@cilantro{½%cup}
@olive oil{2%tbsp}
@butter{1%tbsp}
@salt{1%pinch}
@black pepper{1%pinch}
@water{2%tbsp}

Wash and dry all produce.

Heat a drizzle of @olive oil{2%tbsp} in a #small pot{} over medium-high heat. Add remaining garlic and cook until fragrant, ~{30%seconds}.

Meanwhile, in a #small bowl{}, combine @sour cream{½%cup}, @cilantro{½%cup}, minced @onion{1%unit}, 1 TBSP olive oil, reserved ¼ tsp garlic, juice from two @lime{1%unit} wedges, a pinch of minced @jalapeño{1%unit}, a pinch of @cumin{1%tsp}, @salt{1%pinch}, and @black pepper{1%pinch}. Set aside.

Pat @sirloin steak{8%oz} dry with paper towels. Season all over with remaining cumin, salt, and pepper; rub to thoroughly coat.

Heat a drizzle of olive oil in a #large pan{} over medium-high heat. Add @long green pepper{1%unit}, sliced onion, and a pinch of salt. Cook, stirring occasionally, until softened and lightly charred, ~{6-8%minutes}. If veggies begin to brown too quickly, add a splash of water.

Fluff @jasmine rice{½%cup} with a fork; stir in lime zest, 1 TBSP @butter{1%tbsp}, salt, and pepper.

Serve steak over rice bowls, topped with green peppers and cilantro dressing.
