Core, seed, and remove the white ribs from the @red bell pepper{1%unit}, then thinly slice. Mince or grate the @ginger{1%unit} and @garlic{2%cloves}. Thinly slice the @scallions{4%unit}, keeping the whites and greens separate. Mince the @chili pepper{1%unit}. Slice the @shiitake mushrooms{4%oz}. Trim the @snow peas{4%oz}.

Make the soy mixture: In a #small bowl{}, combine the @soy sauce{2%tbsp} and @sugar{1%tbsp}.

Heat a drizzle of @olive oil{1%tbsp} in a #large pan{} over medium heat. Add the red bell pepper and shiitake mushrooms and cook, tossing, for ~{4%minutes}, until softened and golden brown. Season with @salt{½%tsp} and @pepper{½%tsp}. Add the snow peas and scallion whites and cook, tossing, for ~{3%minutes}, until the snow peas are tender.

Add the ginger, garlic, and a pinch of chili pepper (to taste) and cook, tossing, until fragrant for ~{1%minutes}. Add the soy mixture to the pan and cook for another ~{1%minute}, until slightly thickened.

Add the @egg noodles{8%oz} to the pan and toss to combine with the sauce and vegetables for ~{1%minutes}. Add a large drizzle of olive oil to the pan and cook, without stirring, until the noodles begin to crisp in the bottom of the pan ~{2%minutes}.

Garnish with the scallion greens and @cashew pieces{1%oz}. Enjoy!
