Wash and dry all produce. Quarter @lime{1%unit}.

Open package of @diced skinless dark meat chicken{10%oz} and drain off any excess liquid. In a #large bowl{}, toss chicken with half the @garlic-ginger scallion paste{2%tbsp}, @salt{1%tsp}, and @black pepper{1%tsp}.

Heat @cooking oil{1%tbsp} in a #large pan{} over medium-high heat. Cook chicken until golden brown and cooked through ~{5%minutes}. Transfer to a plate.

While chicken rests, in a #small bowl{} with reserved garlic-ginger scallion paste, add juice from half lime, 1 tbsp @soy sauce{1%tbsp}, 1 tbsp mandarin juice, ½ tsp @sesame oil{½%tsp}, ½ tsp @sugar{½%tsp}, salt, pepper, and @sriracha{1%tsp}. Whisk in @olive oil{2%tbsp} until thick and creamy.

In the #large bowl{}, toss @coleslaw mix{4%cups} and @mixed greens{2%cups} with dressing until evenly coated.

Divide salad between #shallow bowls{}. Top with cooked chicken, @mandarin orange slices{4%oz}, @wonton strips{½%cup}, and remaining @sesame seeds{1%tbsp}. Serve with remaining lime wedges on the side.
