Wash and dry all produce. Halve @lime{1%unit} and cut into wedges. Drain and rinse @mandarin orange slices{1%unit}, reserving 1 tbsp of the juice.

Heat @cooking oil{1%tbsp} in a #large pan{} over medium-high heat. Add shrimp, season with @salt{1%pinch} and @black pepper{1%pinch}, and cook until opaque ~{3%minutes}. Transfer to a #medium bowl{} and toss with @garlic-ginger scallion paste{1%tbsp} until evenly coated.

In a #small bowl{}, whisk together remaining garlic-ginger scallion paste, juice from half the lime, @soy sauce{1%tbsp}, reserved mandarin orange juice, @sesame oil{½%tsp}, @sugar{½%tsp}, a pinch of @salt{1%pinch}, @black pepper{1%pinch}, and as much @sriracha{1%tsp} as you like. Gradually whisk in @olive oil{2%tbsp} until the dressing is thick and creamy.

Divide @coleslaw mix{2%cup} and @mixed greens{4%cup} between shallow bowls. Top with shrimp, remaining mandarin orange slices, @wonton strips{1%unit}, and @sesame seeds{1%tbsp}. Drizzle with dressing and serve immediately with lime wedges on the side.
