Adjust oven rack to top position and preheat oven to 450°F. Wash and dry all produce.

Meanwhile, trim and thinly slice scallions, separating whites from greens. Zest and quarter lime. Thinly slice tomato into rounds.

In a #small bowl{}, combine ketchup and half the mayonnaise. Set aside.

In a #large bowl{}, combine ground beef, scallion whites, garlic powder, half the cumin, half the oregano, remaining fry seasoning, and juice from one lime wedge. Form into two patties, each slightly wider than a bun. -- Food safety: Cook beef patties until internal temperature reaches 160°F.

Toss sweet potatoes with cooking oil and season with salt and black pepper. Spread on a #baking sheet{} and bake until tender and lightly crisp ~{20%minutes}. Once sweet potatoes are done, remove sheet from oven and carefully toss with as much lime zest as you like. Taste and season with additional salt if needed.

Combine coleslaw mix with remaining mayonnaise, sugar, and a squeeze of lime juice. Toss until evenly coated.

Spread bottom potato buns with a thin layer of mayo-ketchup sauce. Fill buns with patties, tomato, and as many crispy fried onions as you like. Serve with slaw and sweet potatoes on the side.
