    Preheat oven to 400°F. In a large pot , bring brown sugar , veggie stock concentrate , 2½%tbsp white wine vinegar , ⅔%cup water , and 1%tsp BBQ seasoning to a simmer. Add chicken breasts , cover, and simmer ⏱️ 15 minutes , turning once.

    Prepare scallions and brioche buns .

    In a medium bowl , combine coleslaw mix , 2%tbsp mayonnaise , ½%tsp sugar , and ½%tsp white wine vinegar. Season with salt and pepper.

    Place brioche buns cut side up on a baking sheet and toast ⏱️ 3 minutes until golden.

    When chicken is cooked through, remove and let cool slightly. Allow liquid to reduce by half. Shred chicken with two forks, return to pot, and toss to coat. Stir in hot sauce to taste.
