Wash and dry all produce. Preheat broiler to high or oven to 500°F. Halve, peel, and thinly slice half the @yellow onion{1%unit} (reserve the other half for another use). Strip @thyme{1%tsp} leaves from stems and discard stems.

Melt @butter{1%tbsp} in a #large pan{} over medium heat (use an ovenproof pan if available). Add thyme and onion. Cook until softened ~{5%minutes}. Season with @salt{1%tsp} and @black pepper{½%tsp}. Pour in @veggie stock concentrate{1%unit} and @water{1%cup}, then bring to a simmer.

Once simmering, add @spinach and ricotta ravioli{12%oz} to the pan. Cover and cook ~{4%minutes}. Uncover and increase heat to high. Continue cooking, spooning stock over ravioli, until tender and stock has reduced ~{5%minutes}. Shake pan occasionally to prevent sticking.

Combine @panko breadcrumbs{¼%cup}, @parmesan cheese{¼%cup}, a drizzle of @olive oil{1%tsp}, and a pinch of salt and pepper in a #small bowl{}.

Remove pan from heat. Carefully stir in @sour cream{½%cup} and @spinach{2%cups} until thoroughly combined and spinach is wilted. Season with salt and pepper. > TIP: Add up to ½ cup water if sauce seems very thick. If your pan is not ovenproof, transfer the mixture to a baking dish now.

Sprinkle the breadcrumb crust mixture evenly over the ravioli. Place under the broiler and broil until golden brown ~{1%minutes}. Divide between plates and serve.
