Wash and dry all produce. Peel and dice @potatoes{1%lb} into ½-inch cubes. Peel and finely dice @onion{1%medium}. Roughly chop @cilantro{¼%cup}. Halve and juice @lime{1%piece}. Prepare @shrimp{8%oz}, @corn{1%cup}, @cream sauce base{½%cup}, @cotija cheese{¼%cup}, @pepitas{1%tbsp}, @flour{¼%cup}, @ancho chili powder{½%tsp}, @garlic powder{½%tsp}, and @southwest spice blend{1%tsp}.

Place potatoes in a #medium bowl{} with @water{1%tbsp}. Cover tightly with plastic wrap and microwave until slightly tender ~{5%minutes}. They will finish cooking in the soup.

Heat a #large pot{} over medium-high heat. Add a drizzle of @olive oil{1%tbsp} to coat.

Add the potatoes (careful when uncovering the bowl, as steam may release), @veggie stock concentrate{1%tablet}, water, and @salt{½%tsp} to the pot.
