2Adjust oven rack to the top position and preheat to 425°F. Wash and dry all produce. -
3Toss ciabatta pieces on a baking sheet with a drizzle of olive oil, salt, and black pepper. Bake on the top rack until golden brown ⏱️ 4 minutes . -
4Heat cooking oil in a large pan over medium-high heat. Add falafel and cook until golden and crispy ⏱️ 3 minutes per side. -
5Meanwhile, in a large bowl , whisk together yogurt, mayonnaise, red wine vinegar, sumac, 1 tsp olive oil, and sugar. Season with salt and black pepper. -
6Halve falafel. -
7Toss baby lettuce, halved grape tomatoes, sliced bell pepper, and sliced cucumber with the dressing. Divide between shallow bowls, top with ciabatta croutons and falafel, and serve immediately.
