Wash and dry all produce.

Heat @cooking oil{1%tbsp} in a #large pot{} over medium heat. Add @onion{1}(finely diced) and cook, stirring occasionally, until softened and fragrant ~{8%minutes}. Lower heat if onion begins to brown too quickly.

While onion cooks, in a #medium pot{}, combine @basmati rice{½%cup}, @water{1½%cups}, and a pinch of @salt{}. Bring to a boil, then cover and reduce heat to low. Cook until rice is tender ~{15%minutes}.

Pat @chicken thighs{2} dry with paper towels; season all over with @salt{} and @black pepper{}.

Add @butter{1%tbsp}, @garlic-ginger scallion paste{1%tbsp}, @garam masala{1%tbsp}, @curry powder{1%tsp}, and @chili powder{½%tsp} to the pot. Stir ~{1%minute} until fragrant. Add @chicken thighs{2}, @chickpeas{1½%cups}, diced @tomato{1}, and @chicken stock concentrate{1%unit}. Simmer until chicken is cooked through ~{15%minutes}.

While stew cooks, roughly chop @cilantro{1%bunch}. Stir half the cilantro into the pot. Serve over rice, drizzled with @yogurt{¼%cup} and topped with remaining cilantro.
