Bring a #medium pot{} of water to a boil. Add @brown rice{1½%cup} and cook until tender, ~{35%minutes}. Drain.

Peel @ginger{1%inch piece}, then mince or finely grate. Trim woody bottom ends from @asparagus{8%oz}, then cut into 2-inch pieces. Thinly slice @scallions{4%stalks}, keeping greens and whites separate. Cut off and discard root ends of @baby bok choy{6%oz}, then separate into individual stalks. Cut @lime{1%unit} into wedges.

Heat a drizzle of @vegetable oil{1%tbsp} in a #large pan{} over medium-high heat. Add @asparagus{} and season with @salt{1%tsp} and @black pepper{½%tsp}. Cook, tossing, until tender, ~{5%minutes}. Remove from pan and set aside. Add @baby bok choy{} and another drizzle of @vegetable oil{} to #large pan{}. Season with @salt{} and @black pepper{}. Cook, tossing, until tender-crisp, ~{4%minutes}. Remove from pan and set aside.

Add @edamame{1%cup}, scallion whites, and a drizzle of @vegetable oil{} to same #large pan{} and cook until warmed through and lightly browned, ~{3%minutes}. Remove from pan and set aside. Meanwhile, stir together @sour cream{¼%cup} and @water{2%tbsp} in a #small bowl{}. Season with @salt{} and @black pepper{}. Stir in @wasabi paste{1%tsp} to taste to make @wasabi crema{}.

Once rice is done, heat another drizzle of @vegetable oil{} in same #large pan{}. Add @ginger{}, @sesame oil{1%tbsp}, and @soy sauce{1%tbsp}. Cook, stirring, until fragrant, ~{1%minutes}. Add @brown rice{}, season with @salt{} and @black pepper{}, and toss to coat.

Divide @brown rice{} between bowls. Top with @asparagus{}, @baby bok choy{}, and @edamame{}. Sprinkle with scallion greens, @cashews{2%tbsp}, and @sesame seeds{1%tbsp}. Drizzle with @wasabi crema{}. Serve with @lime{} wedges for squeezing over.
