    Preheat oven to 450°F. Wash and dry all produce.

    Toss potatoes on a baking sheet with a large drizzle of olive oil , half the smoked paprika , and a big pinch of salt and black pepper . Roast until crispy ⏱️ 20 minutes .

    Meanwhile, melt butter in a medium pan over medium heat. Add sliced onion , ¼ tsp sugar , and a pinch of salt. Cook, stirring, until browned and softened ⏱️ 10 minutes . If onion starts to burn, lower heat and add a splash of water. Stir in sriracha at the end.

    While onion cooks, in a large bowl , combine ground pork , minced onion, half the garlic , remaining paprika, ½ tsp sugar, and a pinch of salt. Form into two patties, each slightly wider than a burger bun.

    Cook patties in a large pan over medium heat until golden and cooked through ⏱️ 4 minutes per side. Top each patty with gouda cheese and cover pan to melt ⏱️ 1 minute . Toast potato buns in the same pan until golden.

    In a small bowl , combine sour cream , mayonnaise , remaining garlic, lime zest, lime juice, and a pinch of salt. Spread sauce onto bottom buns, top with patties, caramelized onion, and serve with crispy fries and asparagus on the side.
