In a small #pot{}, bring 1 ½%cup @water{2%cup} and a large pinch of @salt{1%tsp} to a boil. Place the @lentils{¾%cup} in another small #pot{} with enough water to cover by 1 inch. Bring to a boil, then reduce to a simmer and cook until tender ~{20%minutes}. Once boiling, add the @basmati rice{1%cup} to the other #pot{}, cover, and simmer until tender ~{15%minutes}.

Drain and rinse the @kidney beans{15%oz}. Halve, peel, and finely dice the @yellow onion{1%unit}. Mince the @garlic{2%cloves}. Finely chop the @jalapeño{1%unit}, removing ribs and seeds if you prefer less heat. Finely chop the @cilantro{1%bunch}. Halve the @lime{1%unit} and cut 1 half into wedges. Peel and mince the @ginger{2%tsp}.

Heat 1%tbsp @olive oil{} in a #large pan{} over medium heat. Add the yellow onion, garlic, ginger, and as much of the jalapeño as desired. Cook, tossing, until slightly caramelized ~{5%minutes}. Add half the @cumin{½%tsp}, half the @coriander{½%tsp}, and 2%tbsp @tomato paste{2%tbsp}. Cook until fragrant ~{30%seconds}. Season with salt and @pepper{½%tsp}.

When the lentils are ready, add them to the pan along with the kidney beans and ½%cup water. Bring to a simmer until thickened ~{5%minutes}. Season generously with salt and pepper. If the stew is too thick, add a splash of water.

Stir the @sour cream{¼%cup} and half the cilantro into the stew. Season with salt, pepper, and half of the lime. If you prefer a more intensely spiced stew, feel free to add the remaining cumin and coriander.

Serve the stew on a bed of basmati rice, garnished with the remaining cilantro and lime. Enjoy!
