In a #small pot{}, bring @water{3%cups} and @chicken stock concentrate{1%unit} to a simmer over medium heat. Once simmering, stir in @crushed tomatoes{14%oz} to combine. Keep warm.

Wash and dry all produce. Halve, peel, and finely dice @yellow onion{1%unit}. Finely chop @parsley{½%cup}. Remove @sweet italian pork sausage{12%oz} from casings.

Heat ½ tbsp @butter{2%tbsp} in a #large pan{} over medium heat. Add the diced onion and cook, tossing ~{3%minutes}, until softened. Add the sausage to the pan and cook, breaking up the meat into pieces, until browned and cooked through.

Add @arborio rice{1%cups} to the pan and toss to combine. Cook, stirring ~{2%minutes}, until the rice is translucent around the edges.

Begin adding the warm stock mixture to the pan in ½ cup increments, stirring between each addition, until absorbed. Repeat until the rice is al dente and a loose sauce has formed ~{25%minutes}.

Stir in @parmesan cheese{½%cups} and season generously with @salt{½%tsp} and @pepper{¼%tsp}. Finish with the remaining pat of butter and a sprinkle of parsley. Serve immediately.
