Wash and dry all produce. Thinly slice @mini cucumber{2%unit}. Dice @onion{1%unit} into ½-inch pieces. Remove strings from @sugar snap peas{1%cup}.

In a #medium bowl{}, combine cucumbers, @sesame seeds{1%tsp}, @ponzu sauce{2%tbsp}, @rice wine vinegar{1%tbsp}, 1 tsp @sugar{2%tsp}, a pinch of salt, and as many @korean chili flakes{1%tsp} as you like. Refrigerate until ready to serve. In a #small bowl{}, combine @mayonnaise{2%tbsp} and as much @sriracha{1%tsp} as you like.

Pat @pork chops{12%oz} dry with paper towels, then very thinly slice crosswise. Drizzle @cooking oil{2%tsp} in a hot #large pan{}. Add pork, onion, snap peas, and @garlic powder{½%tsp}; season with salt and pepper. Cook, stirring occasionally, until pork is cooked through and veggies are tender ~{5%minutes}. Remove from heat and stir in @hoisin sauce{2%tbsp}, @sweet soy glaze{1%tbsp}, and 1 tbsp water.

Massage @microwavable rice{2%pouches} in packages to break up grains; partially open packages. Microwave until warmed through ~{90%seconds}. Divide rice between shallow bowls. Top with stir-fry and drizzle with sriracha mayo. Roughly tear @cilantro{1%bunch} and sprinkle on top. Serve with spicy pickled cucumbers (draining first) on the side.
