Place @brown rice{8%oz} and a large pinch of salt in a #large pot{} with enough water to cover by 3 inches. Bring to a boil and cook ~{25%minutes}, until tender. Drain well.

Wash and dry all produce. Core, seed, and thinly slice @yellow bell pepper{2%unit}. Halve, peel, and thinly slice @red onion{2%unit}. Peel and mince @ginger{1%piece} and @garlic{4%cloves}. Finely chop @cilantro{1%bunch}. Trim @sugar snap peas{8%oz}. Halve 1 @lime{1%unit}; cut the other into wedges.

Cut @pork tenderloin{16%oz} into 1-inch cubes and toss in a #medium bowl{} with @cornstarch{1%tbsp} and a large pinch of @salt{1%tsp} and @pepper{1%tsp}.

Heat a large drizzle of @olive oil{1%tbsp} in a #large pan{} over medium-high heat. Working in batches, add pork to the pan and cook, tossing ~{3-4%minutes}, until browned. Remove from pan and set aside.

Heat another large drizzle of olive oil in the same pan over medium-high heat. Add red onion, garlic, and ginger. Cook, tossing ~{2-3%minutes}, until softened. Add yellow bell pepper and cook ~{4-5%minutes}, until softened. Season with salt and pepper.

Add sugar snap peas to the pan and cook ~{2-3%minutes}, until crisp-tender. Stir in pork, @hoisin sauce{4%tbsp}, cilantro, and the juice of 1 lime. Toss ~{1%minute}, until heated through. Serve the stir-fry on a bed of brown rice, with lime wedges for squeezing over. Enjoy!
