Wash and dry all produce. Core, deseed, and finely chop @long green pepper{1%unit}. Trim and thinly slice @scallions{2%unit}, separating whites from greens.

Drain @pineapple{1%cup} over a small bowl, reserving juice. In a #small bowl{}, whisk @hoisin sauce{2%tbsp}, @cornstarch{1%tbsp}, 1 tbsp @sriracha{2%tbsp}, and 2 tbsp water until smooth. Set aside.

Heat @cooking oil{1%tbsp} in a #large skillet{} over medium-high heat. Add @ground pork{10%oz} and season with @salt{1%tsp} and @black pepper{1%tsp}. Cook, breaking up meat into pieces, until browned ~{4%minutes}. If there is excess grease in the pan, carefully pour it out. Push pork to one side of pan; add another drizzle of oil and long green pepper to the empty side. Cook, stirring, until green pepper is lightly browned and slightly softened ~{3%minutes}. Add scallion whites and pineapple to the side of pan with green pepper; season with salt and pepper. Cook, stirring occasionally, until scallion whites are slightly softened and pineapple is lightly browned ~{2%minutes}.

Pour hoisin sriracha mixture into pan with stir-fry; stir everything together until pork is cooked through and stir-fry is thoroughly combined and coated ~{2%minutes}. If sauce is too thick, add a splash of water. Turn off heat. Stir in 1 tbsp @butter{2%tbsp}. Season with salt and pepper.

Massage rice in package to break up grains. Partially open top of package. Microwave @microwavable black rice{2%packets} ~{90%seconds}, then carefully transfer rice to a #medium bowl{}. Stir in remaining butter, scallion greens, and ½ tbsp @sesame seeds{1%tbsp}. Fluff with a fork and season with salt.

Divide rice between bowls. Top with stir-fry. Drizzle with remaining sriracha if desired and sprinkle with remaining sesame seeds as you like. Serve.
