Preheat oven to 400 degrees. Mince @garlic{1%cloves}. Finely chop @shallot{1%unit}. Strip leaves from @thyme{1%sprig} and roughly chop. Halve @baby carrots{2%oz} lengthwise. Peel @potato{1%unit} and cut into ½-inch matchsticks. In a #small bowl{}, combine @panko breadcrumbs{¼%cup} with 2 tbsp @water{⅔%cup} and set aside.

Toss carrots and potato on separate sides of a #baking sheet{} with 1 tbsp @olive oil{1%tbsp}. Season with @salt{1%tsp} and @black pepper{½%tsp}. Roast ~{15%minutes}, tossing halfway, until golden brown.

In a #medium bowl{}, thoroughly mix @ground beef{12%oz}, panko mixture, garlic, half the shallot, half the thyme, and a large pinch of salt and pepper. Pack mixture into a #loaf pan{} and top with 1 tbsp @ketchup{1%tbsp}. Bake ~{15%minutes} until cooked through.

Heat 2 tbsp @butter{2%tbsp} in a #medium pan{} over medium heat. Add remaining shallot and cook, tossing, ~{3%minutes} until softened. Sprinkle 1 tbsp @flour{1%tbsp} and whisk constantly. Whisk in @veggie stock concentrate{1%unit}, remaining water, and remaining thyme. Simmer ~{2%minutes} until thickened. Taste and adjust seasoning if needed.

Slice meatloaf and serve with roasted carrots and potato. Spoon generous shallot gravy over meatloaf. Enjoy!
