Zest and halve the @lime{1%fruit}. Cut the @corn{2%cobs} off the cob. Mince the @garlic{2%cloves}. Thinly slice the @scallions{1%stalk}, keeping green and white parts separate. Cut the @yukon gold potatoes{12%oz} into ½-inch cubes. Halve, core, and dice the @tomato{1%fruit}. Halve the @yellow squash{1%fruit} lengthwise, then slice into ¼-inch half moons.

Heat @olive oil{½%tbsp} in a #large pan{} over medium heat. Add the scallion whites, potatoes, and tomato. Cook, tossing, for ~{9%minutes}, until potatoes have started to soften. Season with @salt{1%tsp} and @black pepper{1%tsp}.

Add the corn, @lima beans{4%tbsp}, and squash. Cook, tossing, for ~{6%minutes}, until potatoes are fork tender and squash has softened. Finish with lime zest and a squeeze of half the lime. Taste and season with salt and pepper. Set aside.

In the same pan, heat remaining olive oil over medium heat. Season the @pork chops{2%pieces} with salt and pepper on each side. Sear the pork chops for ~{5%minutes} per side, until golden brown and cooked to desired doneness. Set the pork chops aside.

Add the garlic to the pan and cook for ~{30%seconds}, until fragrant. Add @dijon mustard{1%tsp}, @honey{1%tsp}, @water{½%cup}, and @veggie stock concentrate{1%unit} to the pan. Bring to a boil, reduce to a simmer, and cook until slightly thickened. ~{3%minutes}

Thinly slice the pork chops and serve over the vegetable hash. Spoon the sauce over the pork and sprinkle with scallion greens.
