    Wash and dry all produce. Dice tomato, slice cucumber, and thinly slice scallions.

    Melt butter in a small pan over medium-high heat. Add panko breadcrumbs , a pinch of salt , and black pepper . Cook, stirring frequently, until golden ⏱️ 4 minutes . Turn off heat and transfer to a plate.

    In a large bowl , whisk together honey dijon dressing and a drizzle of olive oil .

    Add baby lettuce , tomato (diced), mini cucumber (sliced), scallions (thinly sliced), sliced turkey breast , and cheddar cheese to the bowl with the dressing. Toss until evenly combined, separating any pieces of turkey sticking together before tossing. Taste and season with additional salt and pepper as needed. Serve topped with the crunchy panko.
