    Adjust oven racks to upper and middle positions and preheat to 425°F. Wash and dry all produce. Dice sweet potatoes into ½-inch cubes. Drain and rinse corn . Dice roma tomato . Halve, peel, and cut shallot into ½-inch-thick wedges. Halve lime . Core, deseed, and dice poblano pepper . Chop cilantro .

    Pat chicken legs dry with paper towels and season all over with salt and pepper. Toss sweet potatoes with a drizzle of vegetable oil , salt, and pepper on a foil-lined baking sheet . Place seasoned chicken, skin side up, on a separate foil-lined baking sheet .

    Place chicken on top rack and sweet potatoes on middle rack. Roast until chicken is cooked through and potatoes are browned and tender ⏱️ 30 minutes .

    Meanwhile, melt butter in a large pan over medium-high heat. Add corn and cook, stirring occasionally, until lightly charred in spots ⏱️ 8 minutes . If corn pops, cover pan. Season with salt and pepper. Transfer to a medium bowl . Add poblano, shallot, and a drizzle of oil to the same pan over medium-high heat. Cook, stirring often, until slightly blistered ⏱️ 6 minutes . Season with salt and pepper and transfer to bowl with corn.

    In a small bowl , combine bbq sauce , a squeeze of lime juice, and as much hot honey as you like. Remove potatoes from oven and transfer to bowl with veggies. Heat broiler to high. Brush chicken with half the barbecue mixture, saving the rest for serving. Broil until sauce is tacky and beginning to char ⏱️ 3 minutes .

    Toss tomato, cilantro, and a squeeze of lime into bowl with veggie mixture. Season with salt and pepper. Divide potatoes and chicken between plates. Serve with reserved sauce on the side for drizzling.
