In a #small pot{}, combine @jasmine rice{1%cups}, @water{1¼%cups}, and a pinch of @salt{1%tsp}. Bring to a boil, then cover and reduce to a low simmer. Cook until rice is tender ~{15%minutes}. Drain any remaining water.

While rice cooks, wash and dry all produce. Stem and chop @kale{1%bunch}. Mince @garlic{3%cloves}. Halve @grape tomatoes{1%cup}. Thinly slice @scallions{4%stalks}, separating whites from greens.

Remove @italian pork sausage{2%links} from casing if necessary and discard casing. Heat a drizzle of @cooking oil{1%tbsp} in a #large pan{} over medium-high heat. Add sausage, scallion whites, and as many @chili flakes{1%tsp} as you like. Cook, breaking up meat into pieces, until sausage is browned and cooked through ~{4%minutes}.

Heat a large drizzle of @olive oil{2%tbsp} in the same pan over medium heat. Add grape tomatoes, garlic, kale, remaining salt, and @black pepper{½%tsp}. Cook, stirring, until garlic is fragrant ~{30%seconds}.

Stir sausage and cooked jasmine rice into the pan with veggies. Cook, stirring frequently, until everything is well combined ~{1%minutes}. If mixture seems dry, add a drizzle of olive oil. Taste and season with additional salt and black pepper as needed.

Divide fried rice between shallow bowls. Top with scallion greens and serve. For extra spice, sprinkle with remaining chili flakes or drizzle with your favorite hot sauce.
