Wash and dry all produce. Trim and thinly slice @scallions{2%stalks}, separating whites from greens. Trim and discard woody ends from @baby broccoli{10%oz}. Cut into 1-inch-long pieces.

Heat a #medium pot{} over medium-high heat with @olive oil{1%tbsp}. Add scallion whites, baby broccoli, and @bok choy and napa cabbage{1%bunch}; season with @salt{1%tsp} and @pepper{1%tsp}. Cook, stirring occasionally, until veggies are browned and softened ~{4%minutes}. Turn off heat; transfer to a plate.

Heat another drizzle of @olive oil{1%tbsp} in the same pot over medium-high heat. Add @ground beef{12%oz}; season with @garlic powder{1%tsp}, salt, and pepper. Cook, breaking up meat into pieces, until browned and cooked through ~{5%minutes}. Turn off heat; transfer to a plate.

To the pot used for beef, add @szechuan paste{1%tbsp}, @sriracha{1%tsp}, @peanut butter{2%tbsp}, half the @soy sauce{3%tbsp}, @water{3%cups}, and @sugar{1%tsp}. Bring to a boil, then reduce heat to low; whisk until everything is thoroughly combined. Cook, stirring occasionally, until slightly thickened ~{3%minutes}. Taste and add as much remaining soy sauce as you like. Season with salt and pepper if desired.

Increase heat under pot with broth to medium-high. Bring to a boil. Once boiling, add @udon noodles{2%packs} to pot, using tongs to break apart. Cook until tender ~{2%minutes}.

Divide noodles and broth between bowls. Top with veggies, beef, scallion greens, and @sesame seeds{1%tsp}. Serve.
