Wash and dry all produce. Peel and cut @potatoes{2%unit} into bite-sized pieces. Dice @mini cucumber{1%unit} and @apple{1%unit}. Toss @chicken wings{12%unit} with @cornstarch{1%tbsp}, @salt{1%tsp}, and @black pepper{1%tsp}.

Heat a large drizzle of @cooking oil{1%unit} in a #large pan{} over medium-high heat. Add chicken wings in a single layer and cook, turning occasionally, until crispy and cooked through ~{15%minutes}. Transfer to a plate.

Heat a large drizzle of cooking oil in a second #large pan{}, preferably nonstick, over medium-high heat. Add @garlic chicken gyoza dumplings{12%unit}, flat sides down, and ⅓ cup water (be careful of splatter!). Cover and bring to a boil. Reduce heat to medium and cook until water has evaporated and bottoms are crispy ~{6%minutes}.

While dumplings cook, in a #medium bowl{}, combine @honey{2%tbsp}, half the @soy sauce{2%tbsp}, @butter{1%tbsp}, and @sugar{1%tsp}. Once potatoes have cooled, roughly mash with a fork, leaving some small chunks. In a large bowl, combine mashed potatoes, @rice wine vinegar{1%tbsp}, @mayonnaise{2%tbsp}, diced apple, diced cucumber, @pepitas{2%tbsp}, @golden raisins{2%tbsp}, and remaining soy sauce. Season with salt and black pepper to taste.

Divide chicken wings, potato salad, and dumplings between plates. Serve with dipping sauce and @kimchi{1%cup} on the side. Sprinkle with @sesame seeds{1%tsp} if desired.
