Wash and dry all produce. Trim and thinly slice @scallions{2%pieces}, separating whites from greens. Drain and rinse @chickpeas{15%oz}.

Heat a drizzle of @cooking oil{1%tbsp} in a #large pan{} over medium-high heat. Add scallion whites, chickpeas, @veggie stock concentrate{1%unit}, a pinch of salt, and pepper. Cook, covered, shaking the pan occasionally, until scallions are browned and chickpeas are slightly crispy ~{2%minutes}. Note that chickpeas may pop, so be careful. Transfer everything to a #large bowl{}.

While chickpeas cook, massage @microwavable grain blend{1%pack} in package and partially open it. Microwave until warmed through ~{1½%minutes}. Transfer the grain blend to the bowl with the chickpeas. Fluff and season with salt and pepper. Set aside until ready to use.

While the grain blend microwaves, halve @lemon{1%piece}. Quarter @mini cucumber{1%piece} lengthwise and slice into ¼-inch-thick pieces.

In a #small bowl{}, whisk together 3 tbsp @olive oil{¼%cup}, ½ tsp @sugar{½%tsp}, juice from the lemon halves, a pinch of salt, and pepper until thoroughly combined.

To the bowl with the grain blend and chickpeas, add the cucumber, @arugula{2%cups}, @white cheddar cheese{1%cup}, @sunflower seeds{2%tbsp}, and the dressing. Toss to combine. Taste and season with additional salt and pepper if desired.

Divide the grain salad between plates and top with the reserved scallion greens. Serve immediately.
