#small pot{} over medium-high heat. Add a drizzle of @cooking oil{1%tbsp}. Add @white rice{½%cup} and a pinch of @salt{1%tsp}; toast, stirring frequently, until fragrant ~{2%minutes}.

#medium pot{} dry over medium-high heat. Add @bacon{1%oz}; cook, turning occasionally and adjusting heat if browning too quickly, until crispy ~{8%minutes}.

While bacon cooks, wash and dry @green bell pepper{1%unit}(finely chopped), @tomato{1%unit}(diced), and @scallions{2%unit}(trimmed and sliced, whites and greens separated).

In pot used for bacon, heat 2 TBSP reserved bacon fat over medium heat. [- -] If your bacon did not render enough fat, use oil or butter instead.

Add @tomato paste{1%tbsp} to pot with chopped veggies, @kidney beans{1%can}(drained and rinsed), @celery salt{1%tsp}, @cumin{1%tsp}, @cajun spice blend{1%tsp}, @sugar{1%tsp}, and @black pepper{1%tsp}. Cook, stirring, until combined and slightly darkened ~{2%minutes}.
