Adjust oven rack to middle position and preheat oven to 450 F. Wash and dry produce.

In a #small pot{}, combine jasmine rice, 1¼ cups water, and a pinch of salt. Bring to a boil, then cover and reduce to a low simmer. Cook, covered, until rice is tender ~{15%minutes}.

While veggies roast, in a #medium bowl{}, whisk together juice from whole mandarin orange, chicken stock concentrate, sweet thai chili sauce, soy sauce, half the cornstarch, ½ cup water, and 1 tsp sugar.

Pat pork chops dry with paper towels and season all over with salt and black pepper. Heat a drizzle of cooking oil in a #large skillet{} over medium-high heat. Add pork and cook until browned and cooked through ~{4%minutes} per side.

Heat a drizzle of cooking oil in pan used for pork over medium-high heat. Add scallion whites and edamame; cook, stirring occasionally, until fragrant and soft ~{30%seconds}.

Fluff rice with a fork; season with salt and black pepper.
