Wash and dry all produce.

Rinse @shrimp{12%oz} under cold water and pat dry with paper towels. Toss with @fry seasoning{1%unit}, minced @garlic{2%cloves}, and a drizzle of @olive oil{2%tbsp} to marinate.

While shrimp marinates, heat a drizzle of olive oil in a #small pot{} over medium-high heat. Add @scallion whites{2%unit} and ½ tsp @italian seasoning{1%unit}. Cook, stirring, until fragrant ~{1%minute}.

Stir in @water{1½%cups} and @veggie stock concentrate{1%unit}. Bring to a boil, add @pearl couscous{1%cup}, cover, remove from heat, and let stand until water is absorbed ~{5%minutes}.

While couscous cooks, in a #small bowl{}, whisk together half the @balsamic vinegar{2%tbsp}, half the @mayonnaise{2%tbsp}, and ½ tsp @sugar{½%tsp} until smooth. Slowly whisk in remaining olive oil; continue to whisk until combined and creamy. Season with @salt{1%tsp} and @black pepper{1%tsp}.

Heat a #large pan{}, preferably nonstick, over medium-high heat. Add shrimp and marinade; cook, stirring occasionally, until opaque and cooked through ~{5%minutes}.

In a #medium bowl{}, toss @mixed greens{3%cups}, @grape tomatoes{1%cup}, and @fresh mozzarella{4%oz} with as much dressing as you like. Season with salt and pepper. Sprinkle with @sliced almonds{1%tbsp}.

Fluff couscous with a fork. Stir in remaining scallion greens, 1 tbsp @butter{1%tbsp}, and a squeeze of @lemon juice{1%unit}. Season with salt and pepper. Divide couscous between plates, top with shrimp, and serve with salad on the side.
