Bring a #large pot{} of water to a boil with a large pinch of salt. Once boiling, add @brown rice{1%cup} and cook ~{30%minutes}. Once tender, drain and return to pot. Cover and allow to steam.

Peel @carrots{2%pieces} and shave into ribbons lengthwise using a peeler. Repeat with @zucchini{2%pieces}. Trim @scallions{3%pieces}, cut in half lengthwise, then cut into 3-inch pieces. Thinly slice scallions lengthwise into a julienne. Thinly slice @button mushrooms{8%oz}. Mince @garlic{3%cloves}. Peel and mince @ginger{1%inch}.

In a #medium bowl{}, combine @soy sauce{3%tbsp}, minced garlic, minced ginger, and @sugar{1%tsp}. Thinly slice @flatiron steak{7%oz} against the grain, toss into the marinade, and let sit ~{10%minutes}.

In a #small bowl{}, toss sliced scallions with @white wine vinegar{2%tbsp} and a pinch of salt. Set aside.

Heat ½ tbsp @olive oil{1%tbsp} in a #large skillet{} over medium heat. Add carrot ribbons, season with salt and pepper, and cook, tossing, ~{5%minutes} until crisp-tender. Remove and set aside. Repeat with zucchini ribbons. Set aside. Add sliced mushrooms to the skillet, cook ~{5%minutes}, tossing, until golden brown and slightly crispy. Season with salt and pepper.

Heat another ½ tbsp olive oil in the same skillet over medium-high heat. Working in batches, sear each slice of steak ~{20%seconds} per side until browned. Set aside. If using, fry @egg{2%pieces} sunny-side up in a separate pan during this time.

Pour remaining marinade into the skillet and simmer ~{2%minutes} until slightly thickened.

Divide rice between bowls. Arrange steak, zucchini, carrots, and mushrooms on top. Top with pickled scallions, sesame seeds, and fried eggs if using. Drizzle with reduced marinade. Serve immediately.
