Preheat oven to 425°F. Wash and dry all produce. Peel and quarter potatoes. Trim and cut broccoli into florets. Halve and thinly slice shallot.

In a #large bowl{}, combine ground beef, panko breadcrumbs, half the sliced shallot, half the garlic powder, and water. Season generously with salt and black pepper. Mix until just combined.

Form mixture into two mini meatloaves. Place on one side of a #lightly oiled baking sheet{}. Drizzle broccoli with half the cooking oil and season with salt and pepper. Place on the other side of the sheet. Bake until beef reaches 160°F internal temperature and broccoli is tender-crisp ~{20%minutes}.

While everything roasts, strip thyme leaves from stems and finely chop.

Drain cooked potatoes. In a #large pot{}, heat over low heat with remaining sour cream, remaining garlic powder, and butter. Mash until smooth and creamy. Season with salt and pepper.

In a #medium pan{}, add beef demi-glace, remaining cooking oil, and remaining water. Heat over low, scraping up browned bits ~{2%minutes}. Stir in chopped thyme. If necessary, reheat sauce over low heat until warmed through. Serve meatloaves with mashed potatoes, roasted broccoli, and drizzled sauce.
