Wash and dry all produce. Adjust oven rack to top position and preheat oven to 450°F. Cut @potatoes{2%medium} into ½-inch-thick wedges. Trim and thinly slice @scallions{2%stalks}, separating whites from greens, then mince the whites. Drain @black beans{15%oz}. Trim and roughly chop @cremini mushrooms{8%oz}. Trim and discard root end from @baby lettuce{1%bunch}.

Toss potatoes on a #baking sheet{} with a drizzle of @olive oil{1%tbsp}, @salt{¼%tsp}, and @black pepper{¼%tsp}. Roast on top rack until browned and tender ~{18%minutes}.

Meanwhile, in a #small bowl{}, combine @sour cream{2%tbsp}, @mayonnaise{2%tbsp}, ½ tsp scallion whites, 2 tsp olive oil, ½ TBSP water, and ¼ tsp @ranch spice{¼%tsp}. Season with salt and pepper to taste.

Place black beans in a #large bowl{}. Mash with a #potato masher{} or fork until mostly smooth. Stir in mushrooms, scallion greens, @flour{2%tbsp}, remaining scallion whites, remaining ranch spice, ¼ cup water, ½ tsp salt, and pepper. Divide bean mixture into two mounds.

Heat a drizzle of @cooking oil{1%tbsp} in a #large pan{} over medium-high heat. Using a spatula, transfer bean mounds to pan and gently press to flatten into patties, each about as wide as a @potato buns{2%buns}. Cook bean patties until golden brown and crisp ~{4%minutes} per side. Transfer patties to a plate and wipe out the mixing bowl. Halve and toast buns until golden.

Divide bottom buns between plates and top with bean patties, 1-2 lettuce leaves, half the herby mayo, and top buns. Roughly chop remaining lettuce, transfer to the bean bowl, add remaining herby mayo, and toss to combine. Serve burgers with potatoes and salad alongside.
