Wash and dry all produce.

Heat @cooking oil{1%tbsp} in a #large pot{} over medium-high heat. Add @scallions{2}(whites separated from greens), @shredded carrots{1%cup}, @garlic-ginger scallion paste{1%tbsp}, @curry powder{2%tsp}, and @salt{pinch}. Cook, stirring occasionally, until mixture is aromatic and carrots have softened ~{2%minutes}.

Pat @chicken cutlets{2%pieces} dry with paper towels and place between two large pieces of plastic wrap. Pound with a meat mallet or rolling pin until chicken is about ½ inch thick. Season all over with @salt{pinch} and @black pepper{pinch}. TIP: If the chicken is already ½ inch thick, skip pounding.

Heat cooking oil{2%tbsp} in a #large pan{} over medium-high heat. Once oil is hot enough that a pinch of @panko breadcrumbs{½%cup} sizzles when added, add chicken. Cook until panko is golden brown and chicken is cooked through ~{7%minutes} per side. Lower heat if browning too quickly.

Add @water{3%cups}, @chicken stock concentrate{1%pouch}, and @miso sauce concentrate{1%pouch} to the pot with carrots. Bring to a simmer. Add @ramen noodles{2%blocks} and cook, stirring, until just tender ~{4%minutes}. Increase heat under broth if not simmering.

Slice chicken crosswise. Divide noodles and broth between bowls. Top with sliced chicken, @sour cream{2%tbsp}, @sweet soy glaze{2%tbsp}, remaining @scallions{2}(greens), and @sesame seeds{1%tsp}. Serve immediately.
