Preheat oven to 450°F. Wash and dry all produce.

In a #small bowl{}, combine @shallot{1}(finely diced), @white wine vinegar{1%tbsp}, @water{1%tbsp}, @sugar{½%tsp}, @salt{1%pinch}, and @black pepper{1%pinch}. Microwave until shallot is slightly softened and sugar is mostly dissolved ~{2%minutes}. Set aside.

Place @flatbreads{2} on a #baking sheet{} and rub all over with @cooking oil{1%tbsp}; season with @salt{1%pinch} and @black pepper{1%pinch}. Toast in oven until crisp ~{3%minutes}.

While flatbreads toast, heat @cooking oil{1%tbsp} in a #large pan{} over medium-high heat. Add @scallions{4}(whites), @ground chicken{12%oz}, @ras el hanout{1%tsp}, half @garlic powder{½%tsp}, @salt{1%pinch}, and @black pepper{1%pinch}; cook, stirring occasionally, until chicken is cooked through ~{5%minutes}.

Once flatbreads are toasted, remove #baking sheet{} from oven. Carefully flip @flatbreads{2} dimpled sides up; evenly spread with chicken mixture and sprinkle with @cheddar cheese{½%cup}. Return to oven until cheese is melted and bubbly ~{3%minutes}.

In a second #small bowl{}, combine @sour cream{2%tbsp}, remaining @garlic powder{½%tsp}, @sumac{¼%tsp}, a pinch of @salt{1%pinch}, and @black pepper{1%pinch}. Add @water{1%tsp} at a time until mixture reaches a drizzling consistency.

Serve flatbreads topped with sumac sauce, pickled shallots, scallion greens, @pepitas{2%tbsp}, and @bacon{4}.
