Season @lamb chops{1%unit} with @salt{1%tsp} and @black pepper{1%tsp}. Heat a drizzle of @cooking oil{1%tbsp} in a #large skillet{} over medium-high heat. Sear lamb chops ~{3%minutes} per side until browned, then remove to a plate. In the same skillet, cook sliced @button mushrooms{1%unit} until browned ~{5%minutes}. Set aside.

While mushrooms cook, halve, peel, and finely dice half the @onion{1%unit}. Trim, peel, and finely dice the @carrot{1%unit}. Core, deseed, and finely dice the @green bell pepper{1%unit}. Mince the @parsley{1%unit}.

Bring a #medium pot{} of salted water to a boil. Once boiling, add the @orzo pasta{1%unit}. Cook, stirring occasionally, until al dente ~{10%minutes}. Reserve ½%cup pasta water before draining.

While orzo cooks, heat a drizzle of @cooking oil{1%tbsp} in a #large pan{} over medium-high heat. Add diced @onion{1%unit}, @carrot{1%unit}, @green bell pepper{1%unit}, and @italian seasoning{1%tbsp}. Cook, stirring occasionally, until veggies begin to soften and lightly brown ~{5%minutes}. Season with @salt{1%tsp} and @black pepper{1%tsp}.

To the pan with veggies, add @lentils{1%unit}, @marinara sauce{1%unit}, @veggie stock concentrate{1%unit}, and ⅓%cup water. Reduce heat to low and simmer until veggies are tender and sauce has thickened ~{7%minutes}. -- If sauce seems too thick, add a splash of reserved pasta water.

Add half the @parsley{1%unit} to the pot with @orzo pasta{1%unit} and stir to combine. -- If orzo is sticking together, add a splash of reserved pasta water.

Divide orzo between bowls. Top with lentil ragù, seared @lamb chops{1%unit}, and mushrooms. Sprinkle with grated @parmesan cheese{1%unit} and remaining parsley. Serve immediately.
